American breads day 2. All is well our bread flour showed up today so we are in full baguette production mode. My lecturing is lacking, last month no time to prepare teaching 2 classes, this month so far too many extra projects. After this TV thing tomorrow I should have more spare time to prepare. I am going to copy today's notes into google docs as a handout. Bread making 101

After Katrina we built blue tarp roof gingerbread houses. Much fun was had by all!
Hey so I've started a blog for my classes. I hope this can help present and past students keep up with what's going on. We just finished Laminated dough class, on to American Breads, should be fun. Chef Keating and I were in Orlando for the Pro start competition this weekend. We were able to find rye flour which is hard to get in Tallahassee, say hello Ruben!! If you don't know Ruben we'll be making him in class with our homemade rye bread. I'm off to grade exams now, woot :( LOL
